Recipe: Christmas Cake Pops

Are you ready to impress everyone at your Christmas party? I have the perfect recipe for you. These cake pops have taken off over the past few years, in fact, many people have included them in their weddings. They are the perfect little treat.  All of the ingredients can be purchased at Walmart or Michaels. Unfortunately, I did not check Target (although they might have them). Enjoy!

Christmas Cake Pops

Makes ~44

Ingredients

– 1 yellow box cake mix
– 1 tub of frosting (I used green)
– 1 package candy melts
– Wax Paper
– Lollipop sticks
Optional: Sprinkles
Optional: Gift bags and Ribbon

Directions

1. Bake the cake, according to the cake’s instructions. Let sit for at least 15 minutes after taking out of the oven.
2. Now the fun part. After the cake has cooled completely, CRUMBLE cake in a large bowl.
3. Slowly mix in 3/4 of the tub of frosting with your clean hands (you won’t need to use the whole tub–but you can save the rest for later consumption).
4. Roll cake dough into quarter sized balls (should make around 40-45) and place onto baking sheet.
5. Melt your Candy Melts according to the package directions in a microwave safe bowl.
6. Dip the tip of your lollipop stick into the melted candy and place half way through the cake ball.
7. Place in the refrigerator to stiffen for about 15-20 minutes.
8. Insert cake pop into the melted candy with care. This part is difficult, to get a smooth outer you will want to take your time, but you can get creative and create cool swirls, and add sprinkles or other fun things.
9. Place in a styrofoam block to dry. This drying time can take 30 minutes to 1 hour. It depends on the environment.
10. Optional: Once dry, wrap in a pretty wrapper and tie with a bow.

Black Friday + Me = Hospital?

First of all, sorry I have been away for so many days! As I am sure you can tell from the title, I had some issues this past friday! Crazy, right? I am pretty healthy so I have no idea how this happened.

I don’t usually do Black Friday. I don’t think the deals are that great and I like finding unique gifts for family and friends. So it was weird for me waking on Friday morning to go to Joann’s. They had a great deal on fabric and I was very excited!

I was fine, I got my bolts, waited, looked at other products, waited some more. I finally decided to just do the ‘express lane.’ Well I was waiting in the ‘express lane’ for about 40 minutes, when I got warm. So I took off my coat no big deal. I rolled up my sleeves and continued waiting. I still felt warm so I thought, “maybe I should go to the bathroom.” I thought I was going to vomit. But I didn’t want to give up 40 minutes of waiting so I just put my head on my cart and took a deep breathe.

The next thing I know, my head is in someone’s lap and there are people all around me. I fainted. I have never fainted. It was so weird. I don’t remember how it happened, or even if I hit my head (although I am pretty sure I do, because I have a headache).

They got me into a wheelchair, and I called Breon. He was on his way when in the wheelchair I felt warm and clammy again. I also needed to use the restroom. When she tried to help me up to get to a stall, I took 5 steps before my vision when fuzzy and almost fainted again. They finally got me into a stall and after I went they called the ambulance.

They took me to Regions and everything looked fine. I guess I was just dehydrated which didn’t surprise me after taking a look at my lack of water consumption through the past two days.

But now I keep feeling like it could happen again. And I want this headache to go away. I don’t think I have a concussion because the doctor would have said something to that extent and he didn’t.

As for yesterday and today, I am laying low. I am going to try and get some work done when the headache subsides.
